| Katrina-displaced cooks help spread love of Cajun, Creole fare across ...
CLARKSBURG, W.Va. -- It's midmorning at Bon Appetit, and the beignets are long gone. Behind a Plexiglas wall, a cook is chopping vegetables for lunch. Music heavy with brass is blaring, and Chef LeRoy Crump Jr. is rushing about with cell phone in hand, periodically stepping outdoors to greet a passer-by and tout the special, a Cajun shrimp cream pasta. The sign above his 2-week-old restaurant promises "Authentic New Orleans Cuisine and Spirits" -- in small-town West Virginia, 1,000 miles from the French Quarter. After Hurricane Katrina destroyed his New Orleans home and restaurant, Crump traveled to Atlanta, then Daytona Beach, Fla. A chance encounter with a hotel guest who smelled Crump's cooking lured him to Clarksburg, a town of 17,000 in a state he'd barely heard of.
Hidden Cafe Closes in the Highlands
The Hidden Cafe, the only restaurant located in the upper Highlands, closed its doors to the general public on December 31, after a difficult financial year. 'It's all a bit of a shock,' said owner Mary Autera in an emotional interview at the cafe last week. 'I loved being here. It's the nicest people and the nicest community. Everyone is so genuine.' The restaurant, located at 1515 Palisades Dr., opened in April 2002 and was successful from the beginning. Customers liked the menu and the hearty portions. In addition, Autera hosted various artistic endeavors like jazz night and displayed the work of local artists. She also started a catering business. By 2005 the restaurant was well established, with a large Highlands clientele and a catering business that was popular all over the Westside.
Welsh rabbit and other treats from Wales
Welsh cuisine isn't exactly a hot topic around town right now, so the news that Wales Week 2008 is starting Feb. 22 made me wonder just what kind of food would be featured. Other than Welsh rarebit (a dish I'd never tasted), just what do they eat over there? “Cockles, mussels, a lot of seafood," explains Nerys Howell (www.howelfood.co.uk) a celebrity chef in Wales who'll be visiting here during Wales Week. “Our terrain really dictates the food that is available, so since we have a huge coastline, we eat a lot of seafood." Also popular, she says, is a type of seaweed that's collected along the coastline. “It looks like black spinach," she said, “And we usually boil it and serve it, mixed with oatmeal, for breakfast." Of course, the best known and very traditional dish is the Welsh rarebit, or rabbit, a rich blending of cheese, beer and mustard.
Victory snatched away again
John Edwards of North Carolina as the three contended for the Democratic presidential nomination. All she needed, though, were three more backers among the 170 or so people present, and she would pick up a fourth delegate, leaving her two rivals with three apiece. The precinct would be hers. And the targets were out there. Within a few minutes, Vilsack had convinced a supporter of New Mexico Gov. Bill Richardson to join his team. He was at work on a second when success was snatched out of his hands. Someone had worked out a deal. The big three candidates would each surrender four supporters to Richardson. Together with three people who had come to caucus for Sen. Joe Biden of Delaware, they would push the governor across the viability threshold. He would get one delegate. Clinton, Edwards and Obama would tie at three.
Residents flock to the malls for Black Friday
It's beginning to look a lot like Christmas...at the malls, that is. Thousands of early birds started their Christmas shopping, as today began the "other" annual holiday tradition: the first - and busiest - shopping day of the year. KUAM News hit the streets for a post-Thanksgiving report that proves that this Black Friday saw lots of green being exchanged in island shops.A recent survey from America's Research Group showed that 47% of Americans planned to shop on Black Friday. Residents flocked to the Micronesia Mall in Dededo this morning, as some of the popular stores opened for business at 6 in the morning. Holiday shopper Enid Cabatbat says the sales were worth waiting in the busy lines. She says when buying gifts for your loved ones, it's important to live within your means. "It's very important to have a budget because you don't want to go overboard and be in debt the whole year long of what you bought," she said.Cabatbat says popular items on her list today include clothing and appliances, all bought from Macy's Department Store.

New View of Admissions
Now, although Tufts students probably better than most, for some reason, despite so much effort being put into recruiting “mature" students, most schools treat their students as immature and adopt a fairly paternalistic attitude over them, and many commentators here go so far as to claim that students, despite their age, are as adult as non-students of the same age.
