Naans, rotis and tandoori fare are beginning to find acceptance in the land of exotic dishes and Peking duck. But restaurants say it will be a long time before Indian cuisine really tickles the Chinese taste bud. Most of the Chinese clientele in the growing number of restaurants serving Indian food here are in the 20s and 30s, and dominantly male. A majority of the customers are Indians or Western expatriates who relish Indian cooking. In a country that boasts of a mind-boggling variety of exotic, primarily non-vegetarian cuisine whipped out of every organ of a living creature that is fit to be cooked, there are today more than 100 restaurants in the country that cater either exclusively to or also to Indian cuisine. “Indian food is popular but I would have liked its appeal to progress much faster," said Mehernosh Pastakia, whose The Taj Pavilion served the choicest dishes to Indian Prime Minister Manmohan Singh and his delegation when he visited here in January.

You can get it from any health food store, and as I travel to Los Angeles and Las Vegas quite often I'll take melatonin when I get back before going to bed. WHEN I'M TRAVELLING I ALWAYS MISS... Not much now, thanks to the joys of Sky Plus. Of course home is home and there's nothing like your own bed, but I really enjoy spending time on the road in Britain, whether it's in Brighton, Newcastle, Edinburgh or wherever.

The Bolognese is excellent, as deeply meaty as a good stock, but the stuffing in the half-moons is bland. Any flavor it has is dominated by the sweet, bisque-like corn sauce the pasta is served with. This might be a topping to save for summer, when just-picked ears could redeem it. The pasta tasting has the obvious appeal of allowing you to sample more dishes, but it has a drawback, too: The rigatoni are significantly better when ordered on their own, for the simple reason that they come in a bowl, which keeps the Bolognese warm.

Slowly heat the oil in a large, deep frying pan until it is 350-degrees F. While the oil is heating, stir together the flour, cornstarch, salt, and pepper until well blended. Pour the milk in a shallow bowl. Once the oil has reached the right temperature, dip half the crabs, one at a time, into the milk, and then dredge lightly in the flour mixture. Shake off any excess flour and gently ease the crabs, shell side down, into the hot oil. Cook until the crabs are a rich golden brown on one side, about 3-4 minutes, then turn them and continue cooking until browned on the other, about 2-3 minutes longer. Carefully transfer the crabs to a draining rack or thickly crumpled paper towels, and keep them warm while you fry the second batch and prepare the brown-butter sauce. Heat the butter in a nonreactive skillet (such as stainless steel) until it is foamy and begins to brown.
